Muffins
- 5 large very ripe bananas mashed
- 1 c. butter
- 1 1/2 c. granulated sugar
- 2 tsp. vanilla
- 4 eggs
- 1 c. sour cream or full fat plain Greek yogurt
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 3 c. flour
Streusel
- 10 oz. chopped walnuts
- 1/2 c. granulated sugar
- 1 tsp. cinnamon
Preheat your oven to 350°.
In a large bowl, mash the bananas. Add the butter and beat until smooth. Add the sugar, vanilla and eggs and mix well.
Add the sour cream, baking soda, cinnamon and flour. Mix well and scoop into muffin liners, filling them 3/4 full.
In a small bowl, combine the streusel ingredients. Top each muffin with a tablespoon of the mixture.
Bake for 25 minutes at 350° or until tooth pick comes out clean.
Allow to cool to room temperature and store in an airtight container.
